Shepherd’s Pie

Look no further for a delicious weeknight dinner.

Ingredients

  • 1 container pre-made mashed potatoes
  • 1 medium onion, chopped
  • 2 cups frozen vegetables (carrots, peas, potatoes) or Veg-all
  • 1 ½ lbs. ground beef (or ground turkey)
  • ½ cup beef broth
  • 1 Tsp. Worcestershire sauce
  • ¼ teaspoon dried thyme
  • Salt, pepper to taste
  1. Cook the ground beef & onions, add Worcestershire and broth, season with salt, pepper and thyme.
  2. Bring to a simmer and reduce heat to low. Add vegetables. Cook uncovered for 10 minutes, add more broth if needed to keep the meat from drying out.
  3. Prepare mashed potatoes.
  4. Spread the beef, onions, and vegetables in a large baking dish.
  5. Spread the mashed potatoes over the top of the mixture.
  6. Cook at 400°F until browned and bubbling, about 30 minutes. Broil for the last few minutes to brown the potatoes. (Can add grated cheddar and broil.)
