The Maple Street Biscuit Company is a chain with a location in St. Pete. I've been a couple times and the biscuits are good, piled high with unique toppings.
The delicious eat-with-a-fork biscuit you see here is the Farmer: Flaky biscuit, all-natural fried chicken, pecanwood smoked bacon, cheddar cheese topped with fresh house-made apple butter. I got mine with a side of house-made pepper jelly. Mmmmmm!
