Funky Louisiana Yard Birds

Okay so I’ve never actually been to Louisiana but I look forward to learning more about the cajun way.  Just recently I heard from a relative (cousin?!) that enjoyed a special kind of breakfast…  Eggs cooked in bacon fat (the best way of course)… But on the bayou they lay eggs a special way…

Perhaps this would be good along side a Beignet?!
