One of my favorite things is to travel and when I travel, I love to explore the food culture of the city I’m visiting. The first time I had curry was when I lived in Bangkok, Thailand in high school and later I found Indian restaurants in London and Madrid that served amazing curry. A bowl of warm curry over jasmine rice takes me back to those wonderful trips.
Here’s my latest recipe, I must admit it changes each time I make it, but that’s the fun of cooking, experimenting!
1 lb. shrimp (deveined)
1 tbsp. olive oil
1 large red onion
1 large red potato
2 tbsp. curry paste
1 cup uncooked jasmine rice
Salt and pepper to taste
Dice onion and potato and saute in olive oil until tender. Stir in curry paste and shrimp. Let simmer as rice is prepared. Cook the jasmine rice (1 cup rice + 1 1/2 cup water) for 15-20 minutes. Serve hot and enjoy!
I haven’t cooked a lot with curry, if I ever have…will have to try this — it looks great! 🙂
