This is the original recipe from the famous Battletown Inn in Front Royal, Virginia - not far from Winchester.

7 small yellow summer squash
1 sm. onion, diced
1/2 c. lite evap. milk
1/4 c. saltine crackers, crushed (about 10 - 2x2") (save a few*)
3 T. margarine

Directions
Slice squash, then cook in hot water 'til tender. Drain well and mash. Saute onion & crackers in marg, add milk. Add to squash. Pour into greased casserole & top w/a few * cracker crumbs & dot with marg.
Bake at 400°F for about 30 minutes or until knife inserted in center comes out clean. 8-10 servings.
