Vidalia Onion Pie

Sweet Vidalia onions are the key to this tasty side dish.

Grown in 20 southern Georgia counties, Vidalia onions are only available for a few months each year, from April until August. Don't miss your chance to make this savory cheesy dish with just the right amount of sweet.

(Produce identification sticker has a PLU code of 4159 in grocery stores. Only real Vidalia onions will do!)

Ingredients

1 large Vidalia onion, chopped
2 Tbsp. butter
4 oz. swiss cheese, grated (or cheddar)
13 Ritz crackers, rough crush
1/4 cup half-n-half
1 egg
black pepper to taste

Directions

Saute onion in butter until soft.  Spray a pie dish with cooking spray.  Layer onion, cheese, cracker in pie dish, repeat.  In a separate bowl, whisk half-n-half, egg and pepper until well mixed.  Pour over onions.

Bake at 350°F for 20-30 minutes until set and golden brown.
